Summer rice salad a recipe that I often make in the summer is to take to the sea, to have a picnic or simply if I want to eat something cold.

You can choose between mortadella, cooked ham or wustel.
Personally I don’t like meat and fish together, so I either put tuna or I put ham.
I don’t like pickles and not even pickles, however, there are those who use them ready to make first, such as condiriso, if you like them I saw that in the supermarket there is also the light version.
Often I put a jar of corn, or peas and even carrots.
I like to add fried or roasted vegetables based on what I cooked during the week so the rice salad also becomes an empty fridge recipe.
Peppers and tomatoes obviously must be added raw, washed, dried and cut into small pieces.
Summer rice salad procedure:
I cook the rice that does not overcook in abundant salted water, drain it al dente always 2/3 minutes before what is written on the package.
Add the rice to the vegetables that you have prepared before and only before serving season with extra virgin olive oil.
Who likes can add a few tablespoons of mayonnaise to stir.
